Who would have thought to make a Blueberry Cheesecake Donut? I did, and oh boy were they amazing! They were relatively frugal in cost and quick to make.

What you need
Donut mold or pan – You can grab up this 2 pack for around $17. I paid $19 for mine at Hobby Lobby and it was single.
Crust-
1 package Honey Maid Graham Crackers
1/4 cup melted butter
Filling-
2 blocks cream cheese
2/3 cup sugar
2 eggs
Directions for the Crust
Place the graham crackers in a gallon zip lock bag.
Using a rolling pin crush the graham crackers until they are fine. Place in a mixing bowl.
Add the melted butter to the graham crackers.
Mix well until the graham crackers are coated lightly.
Place the graham crackers into a lightly greased pan or mold.
Press firmly to make the crust.
Directions for the Filling
Place the cream cheese into a mixing bowl and let it get soft. I generally leave it on the counter for about an hour.
Add your sugar and eggs to the cream cheese.
Mix until smooth.
Put the cream cheese mixture into a piping bag. If you do not have a piping bag you can use a ziplock bag and snip the corner off.
Pipe the filling into your mold or pan
Bake at 350 degrees for 35 – 40 minutes. Once done, let cool completely before you add toppings.
Add your blueberries (or you can use any other fruit you wish, or leave plain). Drizzle with white chocolate. Enjoy!
